Best Dressed Chicken Ham is made with 100 per cent de-boned chicken breasts and leg quarters. The meat is trimmed of all fat and marinated with spices and flavourings. It is then placed in a chill room for curing.

The cured meat is then cut into tiny pieces and massaged to achieve a specific consistency. The meat is then stuffed into a gauze casing and moulded into the shape of a leg ham. It is then placed in a smokehouse and smoke cooked. After cooking, the ham is cooled and packaged.

Best Dressed Chicken Ham is fully cooked Best Dressed Chicken meat. There are no bones to deal with. It is golden brown, pink on the cut, succulent and ready to please any pallet.

The ham may be served as an addition to the Christmas meal or as an alternative to pork ham or beef roasts. It is great served with eggs for breakfast, as a sandwich with lettuce, tomato and mayonnaise. Best Dressed Chicken ham may be diced and added to potato salads, pasta salads, vegetable salads or as a topping on your own home-made pizza.

For Ideal Results

  • Thaw ham at bottom of fridge overnight.
  • Bake in oven at 250°F for 30 minutes per kg.
  • Remove from oven and tear away netting.
  • Score ham and stud with cloves.
  • Brush with glaze and decorate.
  • Return ham to oven for 10 minutes.
  • Slice and serve.

Best Dressed Chicken Ham with gingered honey coffee glaze

1 level tbsp instant coffee

1 cup hot water

1/2 cup liquidised ginger

3/4 cup honey

METHOD

1. Bake ham according to directions.

2. Remove casing and make diagonal markings on outer surface and stud with cloves.

3. In a saucepan, dissolve coffee in hot water.

4. Add all other ingredients. Stir to combine and bring to a boil.

5. Reduce heat and allow to simmer until a syrupy consistency is achieved.

6. Spoon over ham and return ham to oven for 15 minutes or until golden brown.

7. Decorate with pineapple slices and cherries.
